It Started With a Question
Not "how do we make beer?" That part was already figured out. The question was "how do we make beer that could only come from here?"
India has kokum. Gondhuraj lime. Palm jaggery. Mosambi. Sun-drenched orchards and wild spices and homegrown flavours with centuries of culinary history behind them. The idea that these ingredients belonged in a craft beer, not as a novelty but as the actual soul of the recipe, became the founding conviction of Flying Fox.
That conviction didn't come from a market report. It came from the brewery. From experiments that worked and ones that didn't. From the specific, slightly electric feeling of pulling a sample from a tank and tasting something genuinely new.

Flying Fox was built around one non-negotiable: the person in the brewery had to be as obsessive about flavour as the brand is about creativity.
That person is Lynette Pires, Masterbrewer at Flying Fox and winner of Brewer World's Best Brewer India 2023. She has crafted every single beer in the Flying Fox portfolio, bringing a brewing philosophy rooted in experimentation, local ingredients, and an absolute refusal to make something forgettable.

The Beers: Characters, Not SKUs
Every beer in the Flying Fox lineup started as a question in the brewery. What if we pushed this further? What if this ingredient belonged here? What if the name told you exactly what you were in for?
Golden Fox is the Hefeweizen, wheat-forward and hazy, built on a German yeast strain that delivers banana and clove when it's handled right. Deceptively classic. Obsessively crafted.
Kitsune Lager is named after the mythical fox of Japanese folklore, a trickster, a shapeshifter, always a little more than it appears. The beer is a Japanese rice lager: cleaner than you expect, crisper than most, and one of the most technically demanding styles to brew well. It earns its name.
Mosa Nari is a Belgian Witbier with coriander and orange peel, and the kind of effortless drinkability that makes you realise you're already halfway through your second one.
Dubbel Trouble is a Belgian Dubbel. Rich, dark, warming. The name tells you everything you need to know about what happens after two.
46th Dimension IPA doesn't apologise for being exactly what it is: citrusy, resinous, unapologetically hoppy. A beer with a point of view, brewed for drinkers who want the same.
Gose with the Flow is three sour ales, each built around a local Indian ingredient: Gondhuraj Lime, Pineapple, Kokum. Tart, sessionable, and entirely ours. The kind of beers that could only come from this brewery, in this country, with these ingredients.
Milestones That Meant Something
The Flying Fox brewing story isn't measured in funding rounds. It's measured in the moments that proved the instinct was right.
The Gose with the Flow series was one of those moments. A creative bet that paid off not because it was unusual, but because it was genuinely delicious. Using kokum in a sour ale requires conviction. Getting it right requires craft. Both came together.
Lynette winning Best Brewer India at Brewer World 2023 was another. Independent recognition that what was coming out of this brewery belonged at the top of the conversation.
And Goa, coming soon, is the next one. A state with a drinking culture built around exploration and openness. The kind of place that was always going to find Flying Fox eventually. We just decided to speed things up.
